BA’s Best: Mojitos
A classic for a reason. No special instructions necessary as this is a pretty hard one to mess up. That being said, there’s an idiot for every occasion, so the only word of caution I will give is please please please don’t water down your mojito by adding too much sparkling water. Really get every last delicious drop out of your shaker before adding just a touch of sparkling water to your glass to top it up. Now please don’t find some other way to screw this up and prove me wrong.

Serves 1
Ingredients:
½ cup white sugar
2 sprigs of mint
2 oz white rum
¾ oz fresh lime juice
Sparkling water, to serve
Lime wedges and mint sprigs, to garnish
Directions:
Make a quick simple syrup by combining the sugar with ½ cup water in a small pot over medium heat. Bring to a boil, swirling until the sugar dissolves. Take off the heat and let cool completely.
In a cocktail shaker, muddle ¾ oz simple syrup with the mint sprigs. Add the rum and lime juice, then fill with ice. Shake vigourously for ~30 seconds. Strain every last drop into a tall glass filled with ice. Top off with sparkling water and garnish with lime wedges and mint. Please god let it be Friday soon.
